I only had a Campbell's soup-on-the-go at work today for lunch, thus I was starving at 5pm and ate one of my frozen meals stashed in the freezer in the office. I got home just a little bit ago and although I'm not super hungry I could still go for a little nosh. I haven't been feeling great, so the usually ice cream or maybe a couple of Donettes with some milk seemed a little unwise given their phlegm producing tendancies. I remembered I had some veggies in the fridge and some ranch dip dressing. Ah, carots and celery, that sounded perfect. Not too light, not too heavy. However, they'd been in my fridge since Thanksgiving. But honestly, can chopped crudites go super bad in a couple of weeks? If they were in their original form I wouldn't have thought twice, but now I was unsure.

First I tried the carots stored in their own little tupperware. Perfect. Crunchy and tasty. Then I opened the container with the celery and remembered that I'd also added some broccoli to the mix....that was not a good smell. BUT, the celery looked fine. I piled some on top of my bowl of carots and headed upstair to my room. I tasted a celery stalk on the way up and realized that the broccoli smell must have rubbed off on the celerey, because it had a...not so great taste. Determined, I tried to dip it into the ranch; no luck, still kinda rancid. So I just took the handful of celery and placed it off to the side about two feet away on the tupperware lid for when I'm ready to go back downstairs and then I will throw it away, but the SMELL is permeating everything and I think I need to cut this post off now before I die from rancid broccoli smell being omitted by celery.

The veggies have turned.

I've talked a lot about my love for Mac n' Cheese on this blog and tonight I thought I'd share one of my many recipes that revolve around the cheesiness.  Tonight I felt like something fast, easy and comforting.  Usually I "pair" the mac with fishsticks or maybe Kielbasa, but tonight I was going for even easier.  I grabbed some good ol' Spam.   HEY! Don't knock it until you try it.  Take a look and maybe try it one night when you get home at 8pm and just want foooooood.

The Ingredients.  Kraft Deluxe Original receipe.  This is non-negotiable.  Do not buy any imitation mac n' cheese.  THIS is the good stuff.  Also, the Spam - I always get the Lite, although I'm not sure why, but it's not like this is a healthy meal, so feel free to grab the regular tin if you're feeling crazy.

Bring some water to a boil and pour in the macaroni

Let boil - stir occasionally

Open up some wine...or if you're like me, finish up what's leftover from the last time you opened wine

When the mac starts to really boil, get out a cutting board and a good knife.  Get the Spam and get ready for the FUN part.

Shake out the spam.  It's SO fun!

Slice it up length-wise in thin, but not super thin, slices

fry 'em up on medium to high heat

Package the other half of the block of spam and save in the fridge for spam, eggs and white rice in the morning.  MMMmmm.

Need some veggies.  This is the best invention ever - 5 minutes in the microwave and enough veggies for a couple of meals.

Don't forget to flip the spam as it starts to brown up.

Drain the mac when the tubes are nice and plump

Turn off the heat and in the still warm pot squeeze out the Velveeta cheese from the Kraft Macaroni pak.

Make sure you get it all out...it's the good stuff

Pour back in the mac and mix it up good to coat all the tubes with cheese.

Let the slices of spam dry off on a paper towel to soak up some of the grease

Pour the hot bag of veggies into tupperware so you can take what you want to eat and save the rest in the fridge once it cools down.  Aren't I just FULL of helpful tips.

Plate it all and ENJOY.  Doesn't it look scrumptious??
